Homemade Energy Bites Recipe

These energy bites are a completely natural, refined sugar-free sweet treat that provide you with a healthy boost. Using only four ingredients, they're easy to make and lunch-box friendly - a handy mid-work snack and an alternative to processed breakfast bars!

Amount of energy bites varies depending on the preferred size.

You will need:

250g softened or medjool dates - contains lots of fibre

300g cashews - providing long-lasting energy and improving vitality

100g ground almonds - a good source of magnesium

Pinch of ginger - anti-inflammatory

2–3 tbsps Water

Method:

To soften the dates, place them in hot water for 15 minutes and drain.

Put the dates, cashews, ground almonds and ginger in a food processor and blitz for a few minutes.

Add the water slowly, continuing to blitz.

Scrape out the mixture and roll out before cutting into 12 bars or rolling into balls.

Store in an airtight container and leave in the fridge overnight, or freezer for a few hours.
